How To Make Salpicón de Marisco

Ingredients
- 1/2 pound shrimp, cooked and peeled
- 1/2 pound scallops, cooked
- 1/2 pound squid, cooked and sliced
- 1/2 red onion, finely chopped
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1 tomato, diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon white vinegar
- Salt and pepper, to taste
- Lettuce leaves, for serving
Instructions

In a large bowl, combine the cooked shrimp, scallops, and squid.

Add the red onion, red and green bell pepper, tomato, and cilantro to the bowl.

In a separate small bowl, whisk together the olive oil, lime juice, vinegar, salt, and pepper.

Pour the dressing over the seafood mixture and toss to combine.

Allow the salad to marinate in the refrigerator for at least 1 hour.

Serve the salpicón de marisco on a bed of lettuce leaves.
