Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 cup fresh parsley leaves
  • 1/4 cup fresh basil leaves
  • 2 tablespoons capers
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • Juice of 1 lemon
  • Extra lemon wedges, for serving

Instructions

  1. Preheat grill or grill pan to medium-high heat.

  2. Rub salmon fillets with olive oil and season with salt and black pepper.

  3. In a food processor, combine parsley, basil, capers, garlic, mustard, lemon juice, and a pinch of salt and black pepper. Pulse until well combined.

  4. Grill salmon fillets for about 4-5 minutes per side, or until cooked to desired doneness.

  5. Serve salmon topped with salsa verde and extra lemon wedges on the side.
