Ingredients

  • 2 chicken breasts, grilled and sliced
  • 1 cup freekeh
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook freekeh according to package instructions. Let it cool.

  2. In a large bowl, combine grilled chicken, cooked freekeh, cherry tomatoes, cucumber, bell pepper, red onion, parsley, mint, and cilantro.

  3. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the salsa verde dressing.

  4. Pour the dressing over the salad and toss well to combine.

  5. Serve the chicken and freekeh chopped salad with salsa verde dressing.
