How To Make Chicken & Freekeh Chopped Salad with Salsa Verde

Ingredients
- 2 chicken breasts, grilled and sliced
- 1 cup freekeh
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

Cook freekeh according to package instructions. Let it cool.

In a large bowl, combine grilled chicken, cooked freekeh, cherry tomatoes, cucumber, bell pepper, red onion, parsley, mint, and cilantro.

In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the salsa verde dressing.

Pour the dressing over the salad and toss well to combine.
