How To Make One-pan Prawn & Tomato Curry

Ingredients
- 1 lb of prawns, peeled and deveined
- 2 tbsp of oil
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 tsp of ginger, grated
- 2 tsp of curry powder
- 1 tsp of turmeric
- 1 tsp of cumin
- 1 tsp of coriander powder
- 1 can (14 oz) of diced tomatoes
- 1 cup of coconut milk
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Heat oil in a large pan over medium heat. Add onions, garlic, and ginger. Cook until onions are translucent.

Add the curry powder, turmeric, cumin, and coriander powder. Stir well to coat the onions and spices.

Add the prawns to the pan and cook for 2-3 minutes, until they start to turn pink.

Stir in the diced tomatoes and coconut milk. Season with salt.

Reduce heat to low and let the curry simmer for about 10 minutes, until the prawns are cooked through.

Serve the prawn and tomato curry over rice or with naan bread. Garnish with fresh cilantro.
