How To Make Prawn & Scallop ‘Coctel’

Ingredients
- 1/2 lb prawns, deveined and peeled
- 1/2 lb scallops
- 1/2 cup tomato juice
- 2 tbsp ketchup
- 2 tbsp lime juice
- 1 tbsp hot sauce
- 1/4 cup diced cucumber
- 1/4 cup diced red onion
- 1/4 cup diced avocado
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

In a large pot of boiling water, cook the prawns and scallops for 3-4 minutes, until cooked through. Drain and let cool.

In a bowl, mix together the tomato juice, ketchup, lime juice, hot sauce, cucumber, red onion, avocado, salt, and pepper.

Chop the cooked prawns and scallops into bite-sized pieces and add them to the tomato mixture. Stir gently to combine.

Divide the mixture into serving glasses or bowls and garnish with fresh cilantro.
