Ingredients

  • 1/2 lb prawns, deveined and peeled
  • 1/2 lb scallops
  • 1/2 cup tomato juice
  • 2 tbsp ketchup
  • 2 tbsp lime juice
  • 1 tbsp hot sauce
  • 1/4 cup diced cucumber
  • 1/4 cup diced red onion
  • 1/4 cup diced avocado
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot of boiling water, cook the prawns and scallops for 3-4 minutes, until cooked through. Drain and let cool.

  2. In a bowl, mix together the tomato juice, ketchup, lime juice, hot sauce, cucumber, red onion, avocado, salt, and pepper.

  3. Chop the cooked prawns and scallops into bite-sized pieces and add them to the tomato mixture. Stir gently to combine.

  4. Divide the mixture into serving glasses or bowls and garnish with fresh cilantro.

  5. Serve chilled and enjoy!
