Ingredients

  • 1 pound prawns, cooked and peeled
  • 1 cucumber, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1/2 teaspoon grated ginger
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the prawns, cucumber slices, and chopped cilantro.

  2. In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, grated ginger, salt, and pepper.

  3. Pour the dressing over the prawn and cucumber mixture and toss gently to combine.

  4. Serve chilled and garnish with additional cilantro, if desired.
