How To Make Mushroom & Basil Omelette with Smashed Tomato

Ingredients
- 8 eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup sliced mushrooms
- 1/4 cup fresh basil leaves, chopped
- 2 tbsp olive oil
- 4 tomatoes, smashed
- 1/4 tsp red pepper flakes (optional)
Instructions

In a bowl, whisk eggs, salt, and black pepper.

Heat olive oil in a large non-stick skillet over medium heat.

Add mushrooms and sauté until golden brown, about 5 minutes.

Pour the egg mixture into the skillet and cook for 2 minutes, or until the edges start to set.

Sprinkle chopped basil over one half of the omelette.

Fold the other half over the basil and cook for another 2-3 minutes, until the eggs are fully set.

Meanwhile, in a separate skillet, heat olive oil over medium heat.

Add smashed tomatoes and red pepper flakes (if using) and cook for 5 minutes, until the tomatoes are slightly softened.

Serve the omelette with the smashed tomatoes on the side.
