  • 8 eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup sliced mushrooms
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp olive oil
  • 4 tomatoes, smashed
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. In a bowl, whisk eggs, salt, and black pepper.

  2. Heat olive oil in a large non-stick skillet over medium heat.

  3. Add mushrooms and sauté until golden brown, about 5 minutes.

  4. Pour the egg mixture into the skillet and cook for 2 minutes, or until the edges start to set.

  5. Sprinkle chopped basil over one half of the omelette.

  6. Fold the other half over the basil and cook for another 2-3 minutes, until the eggs are fully set.

  7. Meanwhile, in a separate skillet, heat olive oil over medium heat.

  8. Add smashed tomatoes and red pepper flakes (if using) and cook for 5 minutes, until the tomatoes are slightly softened.

  9. Serve the omelette with the smashed tomatoes on the side.
