Ingredients

  • 8 eggs
  • 1 cup packed spinach
  • 1 cup cherry tomatoes, halved
  • 1/2 cup ricotta cheese
  • 1/4 cup fresh basil leaves, torn
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.

  2. In a large bowl, whisk the eggs and season with salt and pepper.

  3. Add the spinach, cherry tomatoes, ricotta cheese, and basil to the egg mixture. Stir well to combine.

  4. Pour the mixture into the prepared baking dish and spread it out evenly.

  5. Bake for 20-25 minutes, or until the eggs are set and slightly golden on top.

  6. Remove from the oven and let it cool for a few minutes before serving.
