Ingredients

  • 1 lb white fish fillets, cut into fingers
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp dried parsley
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 2 eggs, beaten
  • Vegetable oil, for frying

Instructions

  1. Preheat the oven to 400°F.

  2. In a shallow dish, combine the breadcrumbs, Parmesan cheese, parsley, thyme, garlic powder, paprika, salt, and pepper.

  3. Dip each fish finger into the beaten eggs and then coat it with the breadcrumb mixture.

  4. Heat vegetable oil in a large skillet over medium heat. Fry the fish fingers until they turn golden brown, about 3-4 minutes per side.

  5. Transfer the fried fish fingers to a baking sheet and bake in the preheated oven for 10-12 minutes, or until they are cooked through.

  6. Serve the herby fish fingers hot with tartar sauce or your favorite dipping sauce.
