How To Make Herby Dressed Turnips & Roast Chicken

Ingredients
- 1 whole chicken (about 4 pounds)
- 4 medium sized turnips, peeled and sliced
- 1/4 cup fresh herbs (such as parsley, thyme, and rosemary), chopped
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

Preheat your oven to 375°F (190°C).

Season the chicken generously with salt and pepper, inside and out.

In a small bowl, mix the minced garlic, chopped herbs, and olive oil together.

Rub the herby mixture all over the chicken, ensuring it is coated evenly.

Place the chicken in a roasting pan and roast for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).

Meanwhile, in a separate pan, heat some olive oil over medium heat.

Add the sliced turnips to the pan and sauté for about 10 minutes, or until tender.

Season the turnips with salt and pepper to taste.

Once the chicken is cooked, remove it from the oven and let it rest for 10 minutes before carving.
