Ingredients

  • 4 whole wheat bread rolls
  • 4 frozen fish fingers
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1 tbsp olive oil
  • 1 tbsp tartar sauce
  • 4 lettuce leaves
  • 1 tomato, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Place the frozen fish fingers on a baking sheet and bake for 15 minutes or until crispy and cooked through.

  3. In the meantime, dip each fish finger into the beaten eggs, then coat with breadcrumbs.

  4. Heat olive oil in a non-stick pan over medium heat. Cook the coated fish fingers for 3-4 minutes on each side or until golden brown.

  5. Slice the bread rolls in half and spread tartar sauce on the bottom half.

  6. Place a lettuce leaf and a few slices of tomato on top of the tartar sauce.

  7. Add the cooked fish fingers on top, season with salt and pepper, and cover with the top half of the bread roll.

  8. Serve the lighter fish finger sarnies immediately.
