How To Make Grilled Sea Bass, Crisp Potato Skins & Crab Butter

Ingredients
- 4 sea bass fillets
- 4 large potatoes
- 200g crab meat
- 1/2 cup unsalted butter, softened
- 2 cloves garlic, minced
- 1 lemon, juiced
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions

Preheat the grill to medium-high heat.

Scrub the potatoes and pierce them several times with a fork. Microwave the potatoes on high for 5 minutes to partially cook them.

Cut each potato in half lengthwise and scoop out the flesh, leaving a 1/4 inch thick shell. Reserve the potato flesh for another use.

Brush the potato skins with olive oil and season with salt and pepper. Place the skins on the grill and cook for 10-15 minutes until crispy and browned. Set aside.

In a bowl, combine the softened butter, minced garlic, and lemon juice. Mix well. Gently fold in the crab meat and season with salt and pepper.

Season the sea bass fillets with salt and pepper. Grill the fish for 3-4 minutes per side until cooked through and flaky.

Serve the grilled sea bass fillets on top of the crispy potato skins. Top each fillet with a generous spoonful of the crab butter sauce. Garnish with chopped parsley.
