Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 8 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives
  • 4 hard-boiled eggs, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons capers
  • Salt and pepper, to taste
  • For the vinaigrette:
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Preheat your grill or oven to 400°F (200°C). Season the salmon fillets with salt and pepper.

  2. Cook the salmon for about 12-15 minutes, or until it reaches your desired level of doneness. Set aside to cool slightly.

  3. In a large bowl, combine the mixed salad greens, cherry tomatoes, olives, hard-boiled eggs, red onion, parsley, and capers.

  4. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper to make the vinaigrette.

  5. Divide the salad mixture onto 4 plates. Top each plate with a salmon fillet.

  6. Drizzle the vinaigrette over the salads and serve immediately.
