How To Make Fresh Salmon Niçoise

Ingredients
- 4 salmon fillets (about 6 ounces each)
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives
- 4 hard-boiled eggs, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons capers
- Salt and pepper, to taste
- For the vinaigrette:
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Instructions

Preheat your grill or oven to 400°F (200°C). Season the salmon fillets with salt and pepper.

Cook the salmon for about 12-15 minutes, or until it reaches your desired level of doneness. Set aside to cool slightly.

In a large bowl, combine the mixed salad greens, cherry tomatoes, olives, hard-boiled eggs, red onion, parsley, and capers.

In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper to make the vinaigrette.

Divide the salad mixture onto 4 plates. Top each plate with a salmon fillet.

Drizzle the vinaigrette over the salads and serve immediately.
