How To Make Niçoise Toasts
Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients
- 4 slices of baguette
- 2 tbsp of olive oil
- 1 clove of garlic
- 1 can of tuna, drained
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of Kalamata olives, pitted and halved
- 2 hard-boiled eggs, sliced
- 2 tbsp of capers
- 2 tbsp of fresh parsley, chopped
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Brush both sides of the baguette slices with olive oil and place them on a baking sheet.

Toast the bread slices in the oven for about 5-7 minutes, or until golden brown.

While the bread is toasting, cut the garlic clove in half and rub it on one side of each bread slice.

In a medium bowl, combine the tuna, cherry tomatoes, olives, hard-boiled eggs, capers, and parsley.

Season with salt and pepper, and mix well to combine.

Spoon the tuna mixture onto the garlic-rubbed side of each bread slice.

Garnish with additional parsley, if desired.

Serve the Niçoise toasts immediately.
