How To Make Niçoise Toasts

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 4 slices of baguette
  • 2 tbsp of olive oil
  • 1 clove of garlic
  • 1 can of tuna, drained
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of Kalamata olives, pitted and halved
  • 2 hard-boiled eggs, sliced
  • 2 tbsp of capers
  • 2 tbsp of fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Brush both sides of the baguette slices with olive oil and place them on a baking sheet.

  3. Toast the bread slices in the oven for about 5-7 minutes, or until golden brown.

  4. While the bread is toasting, cut the garlic clove in half and rub it on one side of each bread slice.

  5. In a medium bowl, combine the tuna, cherry tomatoes, olives, hard-boiled eggs, capers, and parsley.

  6. Season with salt and pepper, and mix well to combine.

  7. Spoon the tuna mixture onto the garlic-rubbed side of each bread slice.

  8. Garnish with additional parsley, if desired.

  9. Serve the Niçoise toasts immediately.
