How To Make Niçoise Chicken Salad

Ingredients
- 4 chicken breasts
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced cucumber
- 1/4 cup sliced red onion
- 1/4 cup sliced black olives
- 4 hard-boiled eggs, sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- for the vinaigrette:
- 2 tbsp red wine vinegar
- 1 tbsp Dijon mustard
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/3 cup extra virgin olive oil
Instructions

Preheat the grill or stovetop grill pan on medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper.

Grill the chicken for about 6-7 minutes per side, or until cooked through. Remove from heat and let it rest for 5 minutes before slicing into strips.

In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, black olives, sliced eggs, parsley, and basil.

In a small bowl, whisk together the red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper. Slowly drizzle in the olive oil while whisking until emulsified.

Pour the vinaigrette over the salad and toss until well coated.

Divide the salad onto serving plates and top with the sliced grilled chicken.
