How To Make Tuna Niçoise Protein Pot

Ingredients
- 4 cans of tuna, drained
- 4 cups of mixed salad greens
- 1 cup of cherry tomatoes, halved
- 1/2 cup of sliced black olives
- 1/4 cup of diced red onion
- 4 hard-boiled eggs, halved
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste
- dressing:
- 1/4 cup of olive oil
- 2 tablespoons of Dijon mustard
- 2 tablespoons of red wine vinegar
- 1 clove of garlic, minced
- Salt and pepper to taste
Instructions

In a large bowl, combine the tuna, salad greens, cherry tomatoes, black olives, red onion, and parsley.

In a small bowl, whisk together the olive oil, Dijon mustard, red wine vinegar, garlic, salt, and pepper to make the dressing.

Pour the dressing over the tuna mixture and toss gently to coat.

Divide the tuna Niçoise salad into 4 individual serving pots.

Top each pot with hard-boiled egg halves and season with salt and pepper.
