Ingredients

  • 4 salmon fillets
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 4 cups fresh spinach
  • 1 cup Greek yogurt
  • 2 tbsp chopped dill
  • 1 tbsp capers, drained
  • 1 tbsp lemon juice
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the salmon fillets on a baking sheet and drizzle with olive oil. Season with salt and pepper.

  3. Bake the salmon for 12-15 minutes, or until cooked through.

  4. While the salmon is cooking, heat a pan over medium heat and add the spinach. Cook until wilted, then season with salt and pepper.

  5. In a small bowl, mix together the Greek yogurt, chopped dill, capers, lemon juice, and minced garlic. Set aside.

  6. To serve, divide the spinach between 4 plates and top with a salmon fillet. Drizzle the tartare cream over the salmon.
