Ingredients

  • 4 cod fillets
  • 1 cucumber, diced
  • 1 avocado, diced
  • 1 mango, diced
  • 1/4 red onion, diced
  • 1 jalapeno, seeded and minced
  • Juice of 1 lime
  • 2 tbsp chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat grill or oven to 400°F (200°C).

  2. Season cod fillets with salt and pepper.

  3. Grill or bake cod for 8-10 minutes until cooked through.

  4. In a bowl, combine cucumber, avocado, mango, red onion, jalapeno, lime juice, cilantro, salt, and pepper.

  5. Serve cod topped with the cucumber, avocado, and mango salsa salad.
