Ingredients

  • 1 cup of grits
  • 4 cups of water
  • 1 cup of grated cheddar cheese
  • 1 pound of shrimp, peeled and deveined
  • 2 tablespoons of butter
  • 2 cloves of garlic, minced
  • 1 tablespoon of Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large saucepan, bring water to a boil. Slowly whisk in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

  2. Stir in the grated cheddar cheese until melted and well combined. Remove from heat and set aside.

  3. In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.

  4. Season the shrimp with Cajun seasoning, salt, and pepper. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque.

  5. Divide the cheesy grits among 4 plates. Top with the cooked shrimp and garnish with fresh parsley.

  6. Serve immediately and enjoy!
