Ingredients

  • 1 lb fresh white fish fillets, cut into bite-sized pieces
  • 1 cup fresh lime juice
  • 1 red onion, thinly sliced
  • 1-2 Peruvian yellow peppers, seeded and minced
  • 1 garlic clove, minced
  • 1/4 cup chopped cilantro
  • Salt to taste
  • 1 cup roasted corn kernels
  • 2 sweet potatoes, boiled and sliced

Instructions

  1. Place the fish pieces in a non-reactive bowl and pour lime juice over them. Let it marinate for 20 minutes.

  2. Drain the lime juice from the fish and add sliced onions, minced peppers, minced garlic, and cilantro. Mix well.

  3. Season with salt to taste and let it marinate for another 10 minutes.

  4. Serve the ceviche on a plate, garnished with roasted corn kernels and sliced sweet potatoes.
