How To Make Emeril Lagasse Oyster Po’ Boy Recipe
A classic New Orleans sandwich filled with crispy fried oysters, lettuce, tomato, and a spicy mayo sauce.
Serves:
Ingredients
- 1 cup all-purpose flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cayenne pepper
- Salt and pepper to taste
- 12 oysters, shucked
- 2 cups vegetable oil
- 4 hoagie rolls
- 4 lettuce leaves
- 2 tomatoes, sliced
- For the spicy mayo sauce:
- 1/2 cup mayonnaise
- 1 tbsp hot sauce
- 1 tbsp fresh lemon juice
- 1 garlic clove, minced
Instructions

In a shallow dish, whisk together flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.

Dredge the oysters in the seasoned flour mixture, then shake off the excess.

In a large skillet, heat vegetable oil over medium-high heat until hot but not smoking. Fry oysters in batches until golden and crispy, about 2-3 minutes per side.

To make the spicy mayo sauce, whisk together mayonnaise, hot sauce, lemon juice, and minced garlic in a small bowl.

To assemble the Po’ Boy, spread spicy mayo sauce on the bottom of each hoagie roll. Top with lettuce, tomato slices, and fried oysters. Serve immediately.
