A classic New Orleans sandwich filled with crispy fried oysters, lettuce, tomato, and a spicy mayo sauce.

Serves:

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne pepper
  • Salt and pepper to taste
  • 12 oysters, shucked
  • 2 cups vegetable oil
  • 4 hoagie rolls
  • 4 lettuce leaves
  • 2 tomatoes, sliced
  • For the spicy mayo sauce:
  • 1/2 cup mayonnaise
  • 1 tbsp hot sauce
  • 1 tbsp fresh lemon juice
  • 1 garlic clove, minced

Instructions

  1. In a shallow dish, whisk together flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.

  2. Dredge the oysters in the seasoned flour mixture, then shake off the excess.

  3. In a large skillet, heat vegetable oil over medium-high heat until hot but not smoking. Fry oysters in batches until golden and crispy, about 2-3 minutes per side.

  4. To make the spicy mayo sauce, whisk together mayonnaise, hot sauce, lemon juice, and minced garlic in a small bowl.

  5. To assemble the Po’ Boy, spread spicy mayo sauce on the bottom of each hoagie roll. Top with lettuce, tomato slices, and fried oysters. Serve immediately.
