Ingredients

  • 4 cups water
  • 1/2 cup kosher salt
  • 1/2 cup sugar
  • 1 lemon, sliced
  • 4 sprigs fresh dill
  • 1 tablespoon black peppercorns
  • 4 salmon fillets

Instructions

  1. In a large pot, bring the water to a boil. Remove from heat and let it cool slightly.

  2. Stir in the kosher salt and sugar until fully dissolved.

  3. Add the lemon slices, fresh dill, and black peppercorns to the brine.

  4. Place the salmon fillets in a shallow glass or plastic container and pour the brine over them, making sure they are fully submerged.

  5. Cover the container with plastic wrap and refrigerate for at least 2 hours, or up to overnight.

  6. After brining, remove the salmon from the brine and rinse under cold water to remove any excess salt.

  7. Pat the salmon dry with paper towels before smoking or cooking as desired.
