Ingredients

  • 1 pound of large shrimp, peeled and deveined
  • 1 cup of shredded coconut
  • 1/2 cup of panko breadcrumbs
  • 2 eggs, beaten
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (200°C).

  2. In a shallow bowl, combine the shredded coconut and panko breadcrumbs.

  3. In another bowl, whisk together the eggs, salt, and black pepper.

  4. Dip each shrimp into the egg mixture, then coat it with the coconut and breadcrumb mixture.

  5. Place the coated shrimp in a single layer in the air fryer basket.

  6. Spray the shrimp with cooking spray to help them crisp up.

  7. Cook for 5 minutes, then flip the shrimp and cook for an additional 5 minutes until they are golden brown and crispy.

  8. Serve the air fryer coconut shrimp hot with your favorite dipping sauce.
