Ingredients

  • 2 heads of romaine lettuce, chopped
  • 1/2 cup of grated Parmesan cheese
  • 1 cup of croutons
  • 2 cloves of garlic, minced
  • 4 anchovy fillets, finely chopped
  • 1 egg yolk
  • 1/4 cup of freshly squeezed lemon juice
  • 1/2 cup of olive oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the chopped romaine lettuce, grated Parmesan cheese, and croutons.

  2. In a separate mixing bowl, whisk together the minced garlic, chopped anchovy fillets, egg yolk, and lemon juice.

  3. Slowly drizzle in the olive oil while constantly whisking the mixture until it emulsifies into a creamy dressing.

  4. Toss the Caesar salad with the homemade anchovy dressing.

  5. Season with salt and pepper to taste.
