Ingredients

  • 2 cups cooked chickpeas
  • 1/2 red onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 4 whole wheat tortillas
  • 1 cup chopped lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced cucumbers
  • 1/4 cup sliced red onions
  • 1/4 cup tzatziki sauce

Instructions

  1. In a food processor, combine the chickpeas, red onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and lemon juice. Pulse until well combined but still slightly chunky.

  2. Transfer the mixture to a bowl and stir in the flour. Form the mixture into small patties.

  3. Heat the olive oil in a large skillet over medium heat. Cook the falafel patties for about 4 minutes on each side, or until golden brown and crispy.

  4. Warm the tortillas in a dry skillet or microwave for a few seconds. Place a tablespoon of tzatziki sauce on each tortilla.

  5. Top each tortilla with a few falafel patties, lettuce, tomatoes, cucumbers, and red onions. Fold the sides of the tortilla in and roll tightly to form a wrap.

  6. Slice the wraps in half and serve.
