Ingredients

  • 4 large potatoes, boiled and diced
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, finely chopped
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together mayonnaise, Dijon mustard, and chopped mint leaves to create the dressing. Set aside.

  2. In a large mixing bowl, combine boiled and diced potatoes, chopped red onion, and celery.

  3. Pour the dressing over the potato mixture and gently toss until everything is evenly coated.

  4. Season with salt and pepper to taste.

  5. Chill the potato salad in the refrigerator for at least 1 hour before serving.
