  • 1 fennel bulb, thinly sliced
  • 2 carrots, julienned
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon black pepper
  • Salt, to taste

Instructions

  1. In a large bowl, combine the fennel, carrots, and parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, black pepper, and salt.

  3. Pour the dressing over the fennel and carrot mixture. Toss well to coat.

  4. Serve immediately or refrigerate for later use.
