How To Make Spinach Salad with Warm Bacon-Mustard Dressing

- 8 cups fresh spinach leaves
- 4 slices bacon, cooked and crumbled
- 2 hard-boiled eggs, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- for the dressing:
- 3 tablespoons bacon grease
- 2 tablespoons Dijon mustard
- 2 tablespoons red wine vinegar
- 1/2 teaspoon honey
- Salt and pepper, to taste
Instructions

In a large bowl, combine the spinach, bacon, eggs, red onion, cherry tomatoes, and feta cheese.

In a small skillet, heat the bacon grease over medium heat. Whisk in the Dijon mustard, red wine vinegar, honey, salt, and pepper.

Pour the warm dressing over the spinach salad and toss to coat evenly.
