- 8 cups baby spinach leaves
- 8 slices bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cup thinly sliced red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions

In a large salad bowl, combine the baby spinach, bacon, cherry tomatoes, red onion, feta cheese, walnuts, and dried cranberries.

In a small bowl, whisk together the balsamic vinegar, Dijon mustard, and olive oil until well combined.
