Ingredients

  • 8 cups baby spinach leaves
  • 8 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup thinly sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the baby spinach, bacon, cherry tomatoes, red onion, feta cheese, walnuts, and dried cranberries.

  2. In a small bowl, whisk together the balsamic vinegar, Dijon mustard, and olive oil until well combined.

  3. Drizzle the dressing over the salad and toss to coat evenly.

  4. Season with salt and pepper to taste.

  5. Serve immediately and enjoy!
