Ingredients

  • 6 cups baby spinach leaves
  • 1 small butternut squash, peeled, seeded, and thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded coconut
  • 1/4 cup chopped almonds
  • For the dressing:
  • 1/2 cup coconut milk
  • 1/4 cup lime juice
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce
  • 1 tablespoon grated ginger

Instructions

  1. In a large bowl, combine the spinach, butternut squash, cherry tomatoes, shredded coconut, and chopped almonds.

  2. In a separate small bowl, whisk together the coconut milk, lime juice, maple syrup, soy sauce, and grated ginger to make the dressing.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve chilled and enjoy!
