Ingredients
- 6 cups baby spinach leaves
- 1 small butternut squash, peeled, seeded, and thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded coconut
- 1/4 cup chopped almonds
- For the dressing:
- 1/2 cup coconut milk
- 1/4 cup lime juice
- 2 tablespoons maple syrup
- 1 tablespoon soy sauce
- 1 tablespoon grated ginger
Instructions

In a large bowl, combine the spinach, butternut squash, cherry tomatoes, shredded coconut, and chopped almonds.

In a separate small bowl, whisk together the coconut milk, lime juice, maple syrup, soy sauce, and grated ginger to make the dressing.
