How To Make Smashed Cucumber Salad

Ingredients
- 2 cucumbers
- 2 cloves of garlic, minced
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp sugar
- 1/4 tsp red pepper flakes
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped roasted peanuts
Instructions

Place the cucumbers on a cutting board and use the flat side of a knife to gently smash them.

Cut the smashed cucumbers into bite-sized pieces and transfer them to a large bowl.

In a small bowl, mix together the minced garlic, soy sauce, rice vinegar, sesame oil, sugar, and red pepper flakes.

Pour the dressing over the cucumbers and toss to coat evenly.

Let the salad sit for 10 minutes to allow the flavors to meld.

Sprinkle the chopped cilantro and roasted peanuts over the top of the salad before serving.
