How To Make Smashed Chicken with Corn Slaw

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
- 2 tbsp olive oil
- For the Corn Slaw:
- 2 cups corn kernels
- 1 cup shredded cabbage
- 1/4 cup chopped fresh cilantro
- 2 tbsp mayonnaise
- 1 tbsp lime juice
- Salt and pepper, to taste
Instructions

Preheat the oven to 425°F (220°C).

Season the chicken breasts with salt, pepper, garlic powder, and paprika.

In a shallow dish, combine the flour with salt and pepper. Dredge each chicken breast in the flour mixture, shaking off any excess.

Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown, about 4-5 minutes per side.

Transfer the chicken to a baking sheet and use a clean dish to smash each breast lightly.

Bake in the preheated oven for 12-15 minutes or until the chicken is cooked through and crispy.

In a large bowl, combine the corn kernels, shredded cabbage, chopped cilantro, mayonnaise, lime juice, salt, and pepper. Toss well to combine.

Serve the smashed chicken with a generous portion of the corn slaw.
