Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • For the Corn Slaw:
  • 2 cups corn kernels
  • 1 cup shredded cabbage
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Season the chicken breasts with salt, pepper, garlic powder, and paprika.

  3. In a shallow dish, combine the flour with salt and pepper. Dredge each chicken breast in the flour mixture, shaking off any excess.

  4. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown, about 4-5 minutes per side.

  5. Transfer the chicken to a baking sheet and use a clean dish to smash each breast lightly.

  6. Bake in the preheated oven for 12-15 minutes or until the chicken is cooked through and crispy.

  7. In a large bowl, combine the corn kernels, shredded cabbage, chopped cilantro, mayonnaise, lime juice, salt, and pepper. Toss well to combine.

  8. Serve the smashed chicken with a generous portion of the corn slaw.
