How To Make Rice Noodle & Turkey Salad with Lime-Chilli Dressing

Ingredients
- 8 oz rice noodles
- 1 lb turkey breast, cooked and shredded
- 1 cup cucumber, thinly sliced
- 1 cup carrots, julienne
- 1/2 cup red bell pepper, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, torn
- for the dressing:
- 3 tbsp lime juice
- 2 tbsp fish sauce
- 1 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp chili garlic sauce
Instructions

Cook the rice noodles according to package instructions. Drain and rinse with cold water. Set aside.

In a small bowl, whisk together lime juice, fish sauce, honey, soy sauce, and chili garlic sauce to make the dressing.

In a large bowl, combine the cooked rice noodles, shredded turkey, cucumber, carrots, red bell pepper, cilantro, and mint leaves.

Pour the dressing over the salad and toss well to combine.
