Ingredients

  • 8 oz rice noodles
  • 1 lb turkey breast, cooked and shredded
  • 1 cup cucumber, thinly sliced
  • 1 cup carrots, julienne
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, torn
  • for the dressing:
  • 3 tbsp lime juice
  • 2 tbsp fish sauce
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp chili garlic sauce

Instructions

  1. Cook the rice noodles according to package instructions. Drain and rinse with cold water. Set aside.

  2. In a small bowl, whisk together lime juice, fish sauce, honey, soy sauce, and chili garlic sauce to make the dressing.

  3. In a large bowl, combine the cooked rice noodles, shredded turkey, cucumber, carrots, red bell pepper, cilantro, and mint leaves.

  4. Pour the dressing over the salad and toss well to combine.

  5. Serve immediately and enjoy!
