How To Make Prawn Sweet Chilli Noodle Salad

Ingredients
- 250g prawns, peeled and deveined
- 200g rice noodles
- 1 cucumber, thinly sliced
- 1 carrot, grated
- 1 red pepper, thinly sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped peanuts
- 3 tbsp sweet chili sauce
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp honey
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions

Cook the rice noodles according to package instructions. Drain and rinse with cold water.

In a large bowl, combine the cooked rice noodles, cucumber, carrot, red pepper, cilantro, and mint.

In a small bowl, whisk together the sweet chili sauce, soy sauce, lime juice, honey, sesame oil, salt, and pepper.

Heat a grill pan over medium-high heat. Season the prawns with salt and pepper, then grill for 2-3 minutes on each side until cooked through.

Add the grilled prawns to the noodle salad and drizzle with the sweet chili dressing. Toss to combine.

Sprinkle with chopped peanuts before serving.
