How To Make Ensalada Sierra (Andean quinoa salad)

Ingredients
- 1 cup quinoa, cooked and cooled
- 1 cup corn kernels, cooked
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup feta cheese, crumbled
- 1 avocado, sliced
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon honey
- Salt and pepper to taste
Instructions

In a large bowl, combine cooked quinoa, corn, cherry tomatoes, cucumber, bell pepper, red onion, and cilantro.

In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper to make the dressing.

Pour the dressing over the quinoa mixture and toss until well coated.

Top with crumbled feta cheese and sliced avocado.
