Ingredients

  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 jalapeno, seeded and minced
  • 1/4 cup chopped cilantro
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: avocado, cherry tomatoes, shredded cheese

Instructions

  1. Cook quinoa according to package instructions. Once cooked, fluff with a fork and let it cool.

  2. In a large bowl, combine cooked quinoa, black beans, corn, red bell pepper, red onion, jalapeno, and cilantro.

  3. In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper. Pour the dressing over the quinoa mixture and toss to coat evenly.

  4. Taste and adjust seasonings as needed. Add optional toppings, if desired.

  5. Serve chilled or at room temperature. Enjoy!
