Ingredients

  • 8 oz penne pasta
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/3 cup kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1/4 tsp dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook pasta according to package instructions.

  2. Drain and rinse under cold water.

  3. In a large bowl, combine pasta, cucumber, tomatoes, onion, olives, and feta cheese.

  4. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and black pepper.

  5. Pour dressing over pasta mixture and toss to coat.

  6. Serve immediately or chill in the refrigerator until ready to serve.
