How To Make Vegan Pasta Salad

Ingredients
- 8 oz. fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions

Cook the fusilli pasta according to package instructions. Drain and set aside to cool.

In a large bowl, combine the cherry tomatoes, cucumber, red onion, kalamata olives, parsley, and basil.

In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.

Add the cooled pasta to the bowl of veggies and pour the dressing over it. Toss to coat everything evenly.
