How To Make Wild Rice Salad

Ingredients
- 1 cup wild rice
- 2 cups water
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup dried cranberries
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped almonds
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

Rinse the wild rice under cold water. In a saucepan, combine the rice and water. Bring to a boil, then reduce heat and simmer for 35 minutes or until rice is tender. Drain any excess water and let cool.

In a large bowl, combine the cooked wild rice, cherry tomatoes, cucumber, red onion, dried cranberries, parsley, mint, and almonds.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
