Ingredients

  • 1 cup wild rice
  • 2 cups water
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped almonds
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the wild rice under cold water. In a saucepan, combine the rice and water. Bring to a boil, then reduce heat and simmer for 35 minutes or until rice is tender. Drain any excess water and let cool.

  2. In a large bowl, combine the cooked wild rice, cherry tomatoes, cucumber, red onion, dried cranberries, parsley, mint, and almonds.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Serve chilled or at room temperature.
