How To Make Wild Rice & Feta Salad

Ingredients

  • 1 cup wild rice
  • 2 cups water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring water to a boil. Add wild rice and reduce heat to low. Cover and simmer for 45 minutes or until rice is tender. Drain any excess water and let cool.

  2. In a large bowl, combine cooked wild rice, cucumber, red bell pepper, red onion, feta cheese, and parsley.

  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss gently to combine.

  4. Serve chilled or at room temperature.
