How To Make Wild Rice & Feta Salad

Ingredients
- 1 cup wild rice
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

In a medium saucepan, bring water to a boil. Add wild rice and reduce heat to low. Cover and simmer for 45 minutes or until rice is tender. Drain any excess water and let cool.

In a large bowl, combine cooked wild rice, cucumber, red bell pepper, red onion, feta cheese, and parsley.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss gently to combine.

Serve chilled or at room temperature.
