Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 2 chicken breasts
  • 1 tablespoon miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1 carrot, julienned
  • 1 cucumber, sliced
  • 2 green onions, chopped
  • Sesame seeds for garnish

Instructions

  1. Cook brown rice in a rice cooker or on the stovetop according to package instructions.

  2. In a small bowl, whisk together miso paste, soy sauce, rice vinegar, sesame oil, and honey to make the dressing.

  3. Season chicken breasts with salt and pepper, then grill or pan-fry until cooked through. Let them rest for a few minutes, then slice into thin strips.

  4. In a large bowl, combine cooked brown rice, sliced chicken, carrot, cucumber, and green onions. Pour the dressing over the salad and toss to combine.

  5. Garnish with sesame seeds.

  6. Serve the miso brown rice & chicken salad chilled or at room temperature.
