How To Make Miso Brown Rice & Chicken Salad

Ingredients
- 1 cup brown rice
- 2 cups water
- 2 chicken breasts
- 1 tablespoon miso paste
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon honey
- 1 carrot, julienned
- 1 cucumber, sliced
- 2 green onions, chopped
- Sesame seeds for garnish
Instructions

Cook brown rice in a rice cooker or on the stovetop according to package instructions.

In a small bowl, whisk together miso paste, soy sauce, rice vinegar, sesame oil, and honey to make the dressing.

Season chicken breasts with salt and pepper, then grill or pan-fry until cooked through. Let them rest for a few minutes, then slice into thin strips.

In a large bowl, combine cooked brown rice, sliced chicken, carrot, cucumber, and green onions. Pour the dressing over the salad and toss to combine.

Garnish with sesame seeds.
