How To Make Veggie Rice Pot
Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients
- 1 cup of long-grain rice
- 2 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup of frozen peas
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
Instructions

Rinse the rice under cold water until the water runs clear. Drain and set aside.

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

Add the diced carrot, bell pepper, and zucchini to the pot. Cook for 5 minutes, or until the vegetables are slightly tender.

Stir in the rice, frozen peas, cumin, paprika, salt, and pepper. Cook for 2 minutes, stirring constantly.

Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover the pot, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.

Remove from heat and let the rice pot sit, covered, for 5 minutes before fluffing it with a fork.
