How To Make Mediterranean Potato Salad

Ingredients
- 4 medium-sized potatoes, boiled and diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumbers, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

In a large bowl, combine the boiled and diced potatoes, olives, cherry tomatoes, cucumbers, red onion, feta cheese, parsley, and dill.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

Pour the dressing over the potato mixture and gently toss until all ingredients are well coated.
