Ingredients

  • 8 lamb cutlets
  • 1 cup cooked lentils
  • 100g feta cheese, crumbled
  • 1 red onion, thinly sliced
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • Fresh mint leaves, for garnish

Instructions

  1. Season the lamb cutlets with salt and pepper.

  2. Heat a grill pan or barbecue grill over high heat and cook the cutlets for 3-4 minutes on each side, or until cooked to your liking.

  3. In a large salad bowl, combine the cooked lentils, feta cheese, red onion, cucumber, tomatoes, lemon juice, and olive oil. Toss well to combine.

  4. Season the lentil salad with salt and pepper to taste.

  5. Serve the grilled lamb cutlets on a platter, accompanied by the lentil and feta salad.

  6. Garnish with fresh mint leaves.
