How To Make Lamb Cutlets with Lentil & Feta Salad

Ingredients
- 8 lamb cutlets
- 1 cup cooked lentils
- 100g feta cheese, crumbled
- 1 red onion, thinly sliced
- 1 cucumber, diced
- 2 tomatoes, diced
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and black pepper, to taste
- Fresh mint leaves, for garnish
Instructions

Season the lamb cutlets with salt and pepper.

Heat a grill pan or barbecue grill over high heat and cook the cutlets for 3-4 minutes on each side, or until cooked to your liking.

In a large salad bowl, combine the cooked lentils, feta cheese, red onion, cucumber, tomatoes, lemon juice, and olive oil. Toss well to combine.

Serve the grilled lamb cutlets on a platter, accompanied by the lentil and feta salad.

Garnish with fresh mint leaves.
