How To Make Lentil & Tomato Salad

Ingredients
- 1 cup green lentils
- 2 cups cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions

Cook the lentils according to package instructions. Drain and let cool.

In a large bowl, combine the cooked lentils, cherry tomatoes, red onion, and parsley.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.

Pour the dressing over the lentil mixture and toss to coat.
