- 1 cup kidney beans, cooked and drained
- 1 cup broccoli florets, blanched
- 1 cup carrots, julienned
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1 teaspoon cumin powder
- Salt and pepper, to taste
Instructions

In a large bowl, combine the kidney beans, broccoli, carrots, cherry tomatoes, red onion, and cilantro.

In a small bowl, whisk together the lemon juice, olive oil, cumin powder, salt, and pepper.

Pour the dressing over the salad and toss well to combine.
