Ingredients

  • 1 cup kidney beans, cooked and drained
  • 1 cup broccoli florets, blanched
  • 1 cup carrots, julienned
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the kidney beans, broccoli, carrots, cherry tomatoes, red onion, and cilantro.

  2. In a small bowl, whisk together the lemon juice, olive oil, cumin powder, salt, and pepper.

  3. Pour the dressing over the salad and toss well to combine.

  4. Serve immediately or refrigerate for later use.
