Ingredients

  • 2 large aubergines
  • 2 tbsp olive oil
  • 1/4 cup sultanas
  • 1/4 cup pine nuts
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat a griddle pan or barbecue to high heat.

  2. Slice the aubergines into 1/2-inch thick rounds.

  3. Brush both sides of the aubergine slices with olive oil and season with salt and pepper.

  4. Grill the aubergine slices for 3-4 minutes on each side until charred and softened.

  5. Remove the aubergine slices from the griddle pan and let them cool slightly.

  6. In a small bowl, combine the sultanas, pine nuts, parsley, mint, lemon juice, and a drizzle of olive oil.

  7. Arrange the grilled aubergine slices on a platter and spoon the sultana and pine nut mixture over the top.

  8. Serve the griddled aubergine salad warm or at room temperature.
