How To Make Spiced Chicken & Pineapple Salad

A flavorful and refreshing salad, combining spiced grilled chicken with juicy pineapple chunks.

Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 2 cups mixed salad greens
  • 1 cup pineapple chunks
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 2 tbsp lime juice
  • 2 tbsp olive oil

Instructions

  1. Preheat a grill or grill pan over medium heat.

  2. In a small bowl, mix together paprika, cumin, garlic powder, chili powder, salt, and pepper. Rub the spice mixture onto the chicken breasts.

  3. Grill the chicken for about 8-10 minutes per side, or until cooked through. Remove from heat and let it rest for a few minutes. Slice the chicken into thin strips.

  4. In a large bowl, combine the mixed salad greens, pineapple chunks, red onion, and cilantro. Add the sliced chicken on top.

  5. In a separate small bowl, whisk together lime juice and olive oil. Drizzle the dressing over the salad and toss until well coated.

  6. Serve the spiced chicken and pineapple salad immediately.
