How To Make Spiced Chicken & Pineapple Salad
A flavorful and refreshing salad, combining spiced grilled chicken with juicy pineapple chunks.
Serves:
Ingredients
- 2 chicken breasts, boneless and skinless
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp chili powder
- Salt and pepper, to taste
- 2 cups mixed salad greens
- 1 cup pineapple chunks
- 1/4 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 2 tbsp lime juice
- 2 tbsp olive oil
Instructions

Preheat a grill or grill pan over medium heat.

In a small bowl, mix together paprika, cumin, garlic powder, chili powder, salt, and pepper. Rub the spice mixture onto the chicken breasts.

Grill the chicken for about 8-10 minutes per side, or until cooked through. Remove from heat and let it rest for a few minutes. Slice the chicken into thin strips.

In a large bowl, combine the mixed salad greens, pineapple chunks, red onion, and cilantro. Add the sliced chicken on top.

In a separate small bowl, whisk together lime juice and olive oil. Drizzle the dressing over the salad and toss until well coated.
