How To Make Green Bean Salad

Ingredients
- 1 pound green beans, trimmed
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh parsley
Instructions

Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, until crisp-tender. Drain and transfer to a bowl of ice water to cool.

In a small bowl, whisk together the olive oil, red wine vinegar, garlic, Dijon mustard, salt, and pepper.

Drain the green beans and pat them dry. In a large bowl, combine the green beans, red onion, and parsley. Pour the dressing over the salad and toss to coat.

Serve immediately or refrigerate for later.
