Ingredients

  • 2 cans (15 oz each) garbanzo beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 4 oz feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the garbanzo beans, cherry tomatoes, cucumber, red bell pepper, red onion, kalamata olives, feta cheese, and parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve chilled and enjoy!
